Do commercial dishwashers need an exhaust hood?
It depends on the machine, and this is where a lot of buyers overspend. Under bench machines release very little steam and do not need an exhaust hood at all, so they are true plug and play. Pass through machines are often assumed to need a hood, but that is not always the case. Some pass through models are approved for installation without a hood where the surrounding space is well ventilated, so those can go either way. If a model is listed as hood required, a hood is needed regardless of the space.
The bigger saving is a condenser model. The condenser, or heat recovery, models (the C models such as M1C, M2C and ALC) capture the steam on the machine itself, so they need no hood at all. That removes the cost of buying and installing a canopy and the ductwork behind it, which is often more than the price difference on the machine. If a hood is difficult or expensive to run in your space, a condenser model is usually the smarter buy, and the M2C in particular is one of the strongest sellers in the range for exactly this reason.
Under bench, pass through or pot washer?
Under bench machines sit under a standard bench and suit cafes, bars and smaller kitchens. Pass through machines lift a hood to load racks from one side and out the other, moving far more volume for busy service. Pot washers are built for large pots, pans, trays and utensils that will not fit a standard rack machine.
What does rack size mean?
Rack size refers to the wash chamber clearance. Machines listed as under 500mm take standard racks and everyday plates and glassware. Machines listed as 500mm+ give extra height for taller items, larger plates and bigger trays.
