The Turbofan E28D4 is the flagship of the Turbofan 20 series, a full size 4 tray digital electric convection oven from Moffat with twin bi-directional reversing fans, 5.6kW of heating power, steam injection and 20 programs with 3-stage cooking. It takes 4 x 460mm x 660mm full size sheet pans or 4 x 400mm x 600mm trays in a taller chamber, giving you serious baking capacity in a compact 810mm cabinet.
Turbofan ovens are designed and manufactured by Moffat and backed by Moffat's Australia wide service and spare parts network. The E28D4 suits kitchens and bakeries producing at volume, twin fans keep four full trays even from top to bottom, the steam handles pastry and bread, and the programs keep results consistent across staff. The timer runs up to 999 minutes in count mode for holding and slow cooking. It is hardwired at 25A, so allow for an electrician at installation. Bench mount it on the supplied stainless steel feet or pair it with the SK2731N or SK2731U stand. Four chrome plated oven racks are supplied.

SK2731U stainless steel oven stand, $990.00 plus GST
The matching Turbofan SK2731U stand puts the E28D4 at the perfect working height and adds tray storage underneath, with 6 tray runners taking up to 6 full size sheet pans or 12 half size pans. All stainless steel welded frame on 76mm swivel castors with front dual swivel and wheel locks. If you run 400mm x 600mm trays and GN 1/1 pans instead, the SK2731N version has runners sized for those. Both stands suit the E27, E28 and E31 series. Contact us to add a stand to your order.
Frequently asked questions
Does the Turbofan E28D4 need special electrical installation?
Yes. The E28D4 draws 25A and is hardwired with no cordset supplied, so it needs an electrician to connect it to a dedicated circuit. It still runs on standard 230-240V single phase power, no three phase required. Contact us if you are not sure what your site has.
Does the E28D4 have steam injection?
Yes. The E28D4 has a steam injection mode plus a manual injection key. Connect it to a cold water supply via the optional 3/4" BSP male water connection and it will handle croissants, danishes and crusty bread across four full size trays.
Why does the E28D4 have twin fans?
With four full size trays loaded, a single fan struggles to push even heat to every corner. The E28D4 runs twin 180mm bi-directional reversing fans, one for the upper trays and one for the lower, so the top tray and bottom tray come out the same. It makes a real difference on full loads.
What trays does the Turbofan E28D4 take?
It holds 4 x 460mm x 660mm full size sheet pans or 4 x 400mm x 600mm trays with 80mm spacing between shelves. Four chrome plated oven racks are supplied, and the 4 position side racks are fully removable for cleaning.
What is the difference between the E28M4 and E28D4?
Same cabinet, same 4 tray capacity, same twin fans, same 25A hardwired connection. The E28D4 swaps the mechanical thermostat for digital controls with 20 programs and 3-stage cooking, and adds steam injection and a 999 minute count up timer. For an extra $20 on our pricing, the D is the obvious pick unless your kitchen prefers knobs.
What is the difference between the E28D4 and E32D4?
Both are 4 tray full size digital ovens with steam or moisture injection. The E28D4 has twin fans and 80mm spacing in a drop down door cabinet. The E32D4 has a 2 speed fan, 110mm spacing for taller product and a side hinged door, at a higher price. For flat trays of pastry and roasting, the E28D4 twin fans win. For tall loaves and bulky product, the E32D4 spacing wins.
Does the E28D4 need to be under an exhaust hood?
No. At 5.8kW the E28D4 sits under the 8kW limit for unhooded electric appliances in Australia, so it does not require an exhaust hood. Ventilation requirements can vary by council, so check your local regulations if unsure.
