Turbofan is Moffat's range of commercial convection ovens, built for Australian bakery, cafe, restaurant and hospitality kitchens. The range runs from compact manual ovens under $2,500.00 through to large 6 tray digital ovens, plus matching provers, holding cabinets, stands and stacking kits. Every Turbofan is backed by Moffat's Australia wide service and spare parts network, and every model except the large E35 runs on single phase power, so there is a Turbofan for almost any site without expensive electrical work.
Which Turbofan suits your kitchen?
Compact 610mm wide ovens: The E22M3 and E23M3 are entry level manual ovens for cafes and small kitchens baking in smaller batches. The E33D5 (5 x 1/1 GN trays) adds digital controls, programs and moisture injection, all in just 610mm of bench width.
Plug-in low profile ovens (810mm wide): The E30M3 (3 x 1/1 GN, manual controls) runs off a standard 10A power point, and the E31D4 (4 x 1/1 GN, digital controls with grill mode) comes with a 15A plug-in cordset. No hardwiring and no electrician needed for either, making them the easiest Turbofans to install.
Full size sheet pan ovens: The E27 and E28 series take full size 660mm x 460mm sheet pans with manual controls at a sharp price. The E32D4 is the industry standard full size digital oven for serious baking volume, and the E35D6-30 tops the range with 6 full size trays for bakeries and high volume production.
Gas kitchens: The G32D4 is the gas version of the E32D4, with a 35 MJ/hr infrared burner system. Same full size 4 tray capacity, ideal where gas is already plumbed and electrical capacity is tight.
Provers and holding cabinets: P Series provers and H Series holding cabinets are sized to sit under the matching ovens, turning one footprint into a complete bake and hold station.

Double stacking kits are available for every model to double your capacity in the same footprint, and oven over prover stacking kits let you run a complete bake and prove station in one column.
Frequently asked questions
Do Turbofan ovens need three phase power?
Only the large E35D6-30 requires three phase power. Every other Turbofan runs on single phase, which is a major advantage over most full size commercial ovens. Larger single phase models like the E33D5 need a dedicated high amp circuit, and if your site only has a 15A three phase circuit some models can be split across 2 phases of 15A each. Contact us to check your site's power against the model you want.
Should I choose an electric or gas Turbofan?
Most kitchens choose electric for simpler installation and more model options. The gas G32D4 makes sense where gas is already plumbed for other equipment and your electrical supply is limited, or where gas running costs are lower for high volume baking.
What size Turbofan do I need?
As a rough guide: 3 tray manual ovens suit cafes baking small batches, 4 to 5 tray digital ovens (E31D4, E33D5) suit busy cafes and restaurants, and full size sheet pan ovens (E32D4, G32D4, E35D6-30) suit bakeries and high volume production. If you bake on 660mm x 460mm sheet pans, you need a full size model.
Can Turbofan ovens be stacked?
Yes. Double stacking kits are available for every oven in the range, and dedicated kits let you stack an oven over a matching prover. Stacking doubles capacity without using any extra floor space.
Do Turbofan ovens need to be under an exhaust hood?
Most single Turbofan ovens do not need to be installed under an exhaust hood, which saves thousands in kitchen fit out costs. The two exceptions are the G32D4, because gas appliances require exhaust for combustion fumes, and the E35D6-30, because it exceeds the 8kW limit for unhooded electric appliances. Note this applies to single ovens only: stacked combinations can exceed 8kW combined and would then require a hood. Ventilation requirements can vary by council, so check your local regulations or contact us for advice on your installation.
