Turbofan P85M12 Prover and Holding Cabinet

The Turbofan P85M12 is the biggest prover and holding cabinet in the Turbofan range, holding 12 x 406mm x 736mm trays in a 910mm wide cabinet, with an optional rack set for 457mm x 762mm trays. Switch it between Prove mode for raising dough with heat and humidity, and Hold mode for keeping cooked food at serving temperature. It is sized to sit under a Turbofan E35D6-30 convection oven as a full production baking station, or roll anywhere on its castors as a standalone unit.

Turbofan provers are designed and manufactured by Moffat and backed by Moffat's Australia wide service and spare parts network. The P85M12 runs a gentle low velocity fan, mechanical thermostat from 20 to 85 degrees and humidity control fed by an auto fill water tank that lifts out for cleaning without tools. Full double skin stainless construction keeps the heat in and the running costs down, and at 1.9kW it plugs straight into a standard power point. An optional core temperature probe kit is available for monitored holding.

What does a prover and holding cabinet do?

Two jobs in one cabinet. In Prove mode it holds the gentle warmth and humidity that dough needs to rise properly before baking, croissants, bread, pizza bases and buns. In Hold mode it keeps cooked food at safe serving temperature without drying it out. If you bake in the morning and hold food through service, one cabinet covers both.

What is the difference between the P85M8 and P85M12?

Same 910mm width, same controls, same oven compatibility. The P85M12 is 215mm taller and holds 12 trays against the P85M8's 8, two full E35D6-30 oven loads proving at once. Note the taller cabinet puts an oven stacked on top at a higher working level, so check your reach before choosing.

Does the Turbofan P85M12 need special electrical installation?

No. At 1.9kW drawing 7.9A, the P85M12 comes with a 10A cordset fitted and plugs straight into a standard power point, no electrician needed. Even paired with the three phase E35D6-30 on top, the prover itself just plugs in.

Can an oven sit on top of the P85M12?

Yes. The P85M12 is sized to carry the Turbofan E35D6-30 convection oven on top, matching its 910mm width, prove 12 trays underneath, bake 6 above. Contact us to price the oven and prover combination together.

Does the P85M12 need a water connection?

No. The humidity system runs from a built in auto fill water tank that lifts out for cleaning without tools. If you want it plumbed, there is an optional cold water 3/4" BSP connection, and an optional 3M Cuno water filter kit that installs flush in the rear housing.

What trays does the Turbofan P85M12 take?

It holds 12 x 406mm x 736mm trays with 74mm spacing, the same trays as the E35D6-30 oven above it. An optional rack set converts it to 12 x 457mm x 762mm trays.
