The Convotherm CXEBT10.20D is a 22 tray electric boiler combi oven built for high volume kitchens that need serious throughput in one cabinet. The wider .20 body takes 22 x GN 1/1 trays on 68mm spacing, or 11 x GN 2/1 trays for larger format cooking, and runs on a high performance boiler generating steam outside the cooking chamber for consistent saturation. A disappearing door slides fully down the right hand side of the cabinet, clearing the doorway completely in busy prep areas.
Convotherm combi ovens are manufactured in Germany and distributed in Australia by Moffat, backed by Moffat's Australia wide service and spare parts network. The CXEBT10.20D suits large commercial kitchens, function and event catering, and multi-site operators needing high volume steam, combi and convection cooking from a hardwired electrical connection. The easyTouch 10 inch capacitive touch display runs Press&Go automatic cooking with up to 399 stored profiles, and the ConvoClean+ system handles cleaning without staff standing over the oven. The GN 2/1 tray option means large trays, whole trays of protein or bulk batch cooking can run without splitting loads across two ovens.
Best for: high volume commercial kitchens and function caterers needing large batch steam, combi and convection cooking with a hardwired electrical connection and the option to run GN 2/1 trays.

Convotherm 3251505 Stainless Steel Stand, $2,390.00 plus GST
The 3251505 stand is purpose built for the wider .20 cabinet width and gives a stable, correctly sized base with tray runners underneath for extra dry storage.
Stacking
A CXEBT6.20D can be stacked on top of the CXEBT10.20D as the base unit, electric on electric only. Stacking kit pricing is not yet published, contact us for a quote before ordering.
Does the CXEBT10.20D need an electrician to install?
Yes. The CXEBT10.20D is hardwired, draws 48.7A on a three phase 400V supply, and needs a licensed electrician for installation. It is not a plug-in appliance.
How does the steam generation work?
Steam is generated by a high performance boiler outside the cooking chamber, giving guaranteed saturation for steam mode and automatic moisture control in combi-steam mode. Natural Smart Climate (ACS+) manages humidity and airflow through the cook automatically, with Crisp&Tasty, BakePro and HumidityPro extra functions if finer control is needed.
What trays does it take?
The CXEBT10.20D takes 22 x GN 1/1 trays or 11 x GN 2/1 trays on 68mm spacing, or up to 16 x 600 x 400mm baking sheets with the appropriate rack fitted.
CXEBT10.20D or CXEBT10.10D, which one do I need?
Both hold 11 shelves and run the same easyTouch controls, boiler and disappearing door. The CXEBT10.10D takes GN 1/1 trays only, 11 at a time. The CXEBT10.20D is the wider cabinet, taking 22 x GN 1/1 trays or 11 x GN 2/1 trays, so it suits kitchens running large format trays or genuinely high covers. If your service doesn't need GN 2/1 capacity, the narrower CXEBT10.10D saves on footprint and cost.
Do I need an exhaust hood?
Yes. Combi ovens release steam every time the door opens, so extraction is required regardless of the kW rating. Ventilation requirements can vary by council, so check your local regulations if unsure.
What does the disappearing door do?
Instead of swinging open, the door slides fully down the right hand side of the cabinet and out of the way completely. This is useful in busy kitchens where a standard swing door would block a walkway or catch on nearby equipment when loading trays.
