10-tray reach-in blast chiller and freezer from Friginox, built for kitchens running high volume batch cooking that need to hit HACCP chill times every time.

The 7" touch screen keeps it simple on the floor. Staff pick hard or soft chill, hard or soft freeze, or let the self-adaptive mode read the core probe and adjust the cabinet temperature on its own so the surface of the food doesn't freeze before the core catches up. Three-point core probe gives an accurate read instead of guessing off the outside of the product.

Ten pairs of runners come standard and adjust to two spacings, so the cabinet handles GN pans or 600 x 400mm bakery trays without swapping hardware. The automatic fan stop cuts the evaporator fans the moment the door opens, and the door latches open on its own when the unit's not running so the cabinet can air out instead of holding moisture.

Cabinet is 304 stainless steel inside and out, 60mm foam insulation, heated door frame to stop condensation building up round the seal. Runs on R455A refrigerant.

What's the difference between hard and soft chill?
Soft chill runs a gentler air temperature for delicate items, hard chill pulls heat out faster for denser product. The self-adaptive mode picks between the two based on the core probe reading.
