A bratt pan is one of the most versatile pieces of equipment in a commercial kitchen. The flat pan surface works as a griddle for browning and searing, and with the lid down it holds heat for stocks, braises and slow cooked dishes. An integrated water tap fills the pan directly, and when you're done, the whole pan tilts forward to pour straight out through the spout rather than lifting or ladling anything out by hand.

Three 5.66kW elements mount directly to the underside of the pan, M-shaped so heat spreads evenly across the whole cooking surface rather than from a few fixed points. A thermostat runs 50-320°C with an over-temperature safety cut-out. The BP8120EE tilts at the touch of a switch, an electric motor doing the same job a manual wheel would, just without the winding.

The lid itself doubles as a stainless steel bench-top workspace when closed. Low back models are also available. Waldorf 800 Series is made by Moffat in New Zealand.

What is a bratt pan used for?

Browning, searing and grilling on the flat pan surface, plus boiling, braising and slow cooking with the lid down. The pan tilts to pour contents straight out through the spout when you're finished.

Does the BP8120EE tilt manually or electrically?

Electrically, at the touch of an up or down switch. The BP8120E is the same 1200mm electric bratt pan with a manual wheel tilt instead, if you'd rather not run a motor.
