A bratt pan is one of the most versatile pieces of equipment in a commercial kitchen. The flat pan surface works as a griddle for browning and searing, and with the lid down it holds heat for stocks, braises and slow cooked dishes. An integrated water tap fills the pan directly, and when you're done, the whole pan tilts forward to pour straight out through the spout rather than lifting or ladling anything out by hand.
An eight pronged 90MJ burner heats the 1080mm x 450mm pan. The eight separated, spaced burner elements spread heat evenly across the cooking surface, and the 12mm thick pan base makes the heat even more consistent. It's controlled by a thermostat running 50-320°C with an over-temperature safety cut-out. The BP8120G tilts by turning a wheel on the front of the unit, which drives a worm gear to slowly lift and tilt the pan, a simple, durable mechanism with a fold-away handle when not in use.
Like all Moffat gas equipment except fryers, a gas regulator is supplied with the BP8120G, but it is not pre-fitted, your licensed gas fitter fits it as part of installation. The lid itself doubles as a stainless steel bench-top workspace when closed. Low back models are also available. Waldorf 800 Series is made by Moffat in New Zealand.
What is a bratt pan used for?
Browning, searing and grilling on the flat pan surface, plus boiling, braising and slow cooking with the lid down. The pan tilts to pour contents straight out through the spout when you're finished.
Does the BP8120G tilt manually or electrically?
Manually, by wheel. The BP8120GE is the same 1200mm gas bratt pan with an electric motor tilt instead, controlled by up and down switches, if you'd rather not wind the wheel.
