Each 13 litre pan has its own 45MJ/hr infra-red burner and its own control, so you can fry two products at different temperatures at once, keep flavours apart, or turn one side off in quiet times to save gas. Together the two pans fry up to 31kg an hour, and a large cold zone below the burners lets crumbs settle away from the heat, keeping the oil cleaner and lasting longer.

The infra-red burners transfer heat from the burner to the pan more efficiently than a direct flame, which loses energy to the surrounds, so the FN8226GH heats faster and uses less gas for the same output. The stainless steel pans carry a 10 year limited warranty.

Waldorf Continuum is made by Moffat. The FN8226GH runs on natural gas or LPG, so a licensed gas fitter makes the connection. It has dial controls and piezo ignition, so it needs no power point. Like all Moffat gas fryers, it has a gas regulator built in, so a separate regulator is not required and should not be fitted. The FN8226GH is supplied set to the gas type you order and includes a conversion kit, so if you order natural gas the LPG conversion kit comes with it for later use if you ever need to switch.

Best for: busy kitchens that need to fry two products at once, or that switch between one and two pans during the day.

Frequently asked questions

Who makes the Waldorf FN8226GH?
Moffat makes Waldorf in New Zealand. Moffat also distributes and services it across Australia.

Has the FN8226GH replaced the FN8226G?
Yes. The FN8226GH is the FN8226G in the new Waldorf Continuum range. It keeps the two 13 litre pans and the twin 45MJ/hr infra-red burners, comes with a high back as standard (the H in the model number) and is now 818mm deep and 1130mm high.

Why choose a twin pan fryer like the FN8226GH?
You can run two oils and keep flavours apart, like seafood away from chips, run each pan at a different temperature, or turn one side off in quiet times to save gas. If space is tight, twin pan is the way to go.

Can I run just one pan on the FN8226GH?
Yes. Each pan has its own burner and its own control, so you can turn one side off in quiet times and only heat the oil you need.

Is the FN8226GH better than two single pan fryers?
If you have the room, two single pan fryers are better. You get more capacity, and if one goes down you're still frying. If space is tight, the twin pan gives you two pans in one 450mm unit.

What is the difference between the FN8226GH and the FN8120GH?
Same 450mm width and the same 90MJ of infra-red burners. The FN8120GH has one 20 litre pan. The FN8226GH splits that into two 13 litre pans, each with its own burner and control.

What is the difference between the FN8226GH and the FN8226GEH?
Same fryer, same two 13 litre pans and twin 45MJ/hr infra-red burners. The FN8226GH has dial controls and runs on gas only. The FN8226GEH has a digital control and three programmable timers on each pan, and needs a 10A power point.

Does the FN8226GH need power?
No. It runs on gas only with dial controls and piezo ignition, so no power point is needed.

How does the FN8226GH heat the oil?
Instead of a direct flame under the pan, the infra-red burners radiate heat into the pan. That transfers more of the gas energy into the oil and less into the surrounds, so it heats faster, recovers quicker between baskets and uses less gas for the same output.

How does the FN8226GH keep crumbs from burning?
The FN8226GH heats the oil from partway up each pan, not from the bottom. The burners sit higher up, so the oil heats from there up and the oil below stays cool. Crumbs and stray bits of product sink into that cold zone and stop cooking, so they don't burn and break down your oil.

Do I need flat filter trays in the FN8226GH?
No, and they can shorten your oil life. They hold crumbs up in the hot cooking zone where they keep burning, and the tray and the mess on it block the convection currents. Hot oil is thick and needs to move freely to cook evenly and recover fast. The cold zone already does the job.

How much oil does the FN8226GH hold?
13 litres in each pan, 26 litres in total.

What temperature should I set the FN8226GH to?
180°C or under. Going hotter doesn't cook any better, it just burns your oil.

Should I turn the FN8226GH up to full if I'm slammed?
No. It's a common mistake. Turning it up doesn't give you more power and won't get the oil back to 180°C any faster. All it does is burn your oil.

Should my gas fitter add a regulator to the FN8226GH?
No. The FN8226GH has a regulator built into the gas control valve. Fitting an external one can take control away from the built in regulator, and sitting under the fryer it gets hit with caustic cleaning chemicals, which causes problems down the track.

Does the FN8226GH come with a gas conversion kit?
Yes. The FN8226GH is supplied set to the gas type you order and includes the conversion kit for the other gas type, so if you order natural gas the LPG kit comes with it.

Is LPG weaker than natural gas on the FN8226GH?
No, it cooks exactly the same. Natural gas is delivered at about 1kPa, so the fryer needs larger jets to get its full 90MJ/hr. LPG is delivered at about 2.5kPa and carries more energy, so the jets are smaller to cut back the gas flow. The end result is the same power either way.

Where should the FN8226GH be positioned?
Under an exhaust hood, with no shelves above it, and at least 500mm away from equipment like combi ovens. Fryers put vaporised oil into the air, and if that gets into a combi it can damage the electronics.

What can I put beside the FN8226GH?
Yes, fryers can go beside most things. You'll usually want an infill bench next to it to hold the product you're about to fry. If you're worried about water or food falling into the oil from the next appliance, side shields are available.

How do I clean the FN8226GH?
Drain the oil, flush each pan out with water, then clean it with plain soap and water. Food often jams in the drain, so be careful clearing it. People push a metal rod in to clear it and then close the drain valve on the rod, which damages the seals in the ball valve and makes it leak.

How do I avoid service calls on the FN8226GH?
Too much hosing. Water gets into the pilot, valves and jets. The jets are aluminium, and floor cleaner and oven and grill cleaner react with it.

Why should I use the lid on the FN8226GH?
Put the lid on every night so nothing falls into the oil. It's also your best friend in a fire, because it smothers it fast.

Can I fit an oil filter under the FN8226GH?
Yes. The Waldorf Filtamax FF8130E 20 litre filter fits under it.

Do I need an oil filter machine for the FN8226GH?
Often not anymore. When oil prices were crazy they paid for themselves. Now a drum of oil is around $50, and oil companies supply in bulk with a pump out tank, so for most kitchens the saving isn't worth the cost and the time spent filtering.

What is the difference between Cue and Bold?
Stainless as standard, or Cue or Bold. Cue puts a coloured vitreous enamel finish on the control panel, and the rest of the fryer stays stainless steel. Bold puts the colour on the control panel and the front panels, so the whole front is coloured. Both come in black (C0 or B0), chilli red (C2 or B2) or burgundy (C3 or B3).

Is a Cue or Bold FN8226GH any different inside?
No. Cue and Bold are the same fryer with an enamel finish. Performance, oil capacity and warranty are the same as the stainless model.

What comes with the FN8226GH?
Two standard fryer baskets, a stainless steel lid and a gas conversion kit.

How much is delivery on the FN8226GH?
Delivery is typically $120 plus GST. Use the Freight Cost Guide button on this page for the exact price to your postcode, including whether a tailgate is needed.

Will the driver unload the FN8226GH off the truck?
Standard freight delivers to your kerbside, and strictly speaking getting the fryer off the truck is up to you. A tailgate truck has a lift on the back to lower it to the ground. Most drivers will give you a hand anyway, but a tailgate is the only way it's guaranteed.

Do you have scratch and dent units?
Sometimes. These are Moffat units with freight damage or ex-display, subject to availability.
