Two 45MJ/hr infra-red burners heat a 20 litre open pan to fry up to 31kg an hour, and a large cold zone lets crumbs settle below the burners to keep the oil clean and lasting longer.
The infra-red burners transfer heat from the burner to the pan more efficiently than a direct flame, which loses energy to the surrounds, so the FN8120GH heats faster and uses less gas for the same output. The stainless steel pan carries a 10 year limited warranty.
Waldorf Continuum is made by Moffat. The FN8120GH runs on natural gas or LPG, so a licensed gas fitter makes the connection. Like all Moffat gas fryers, it has a gas regulator built in, so a separate regulator is not required and should not be fitted, since an extra regulator becomes a point of failure. The FN8120GH is supplied set to the gas type you order and includes a conversion kit, so if you order natural gas the LPG conversion kit comes with it for later use if you ever need to switch.

Has the FN8120GH replaced the FN8120G?
Yes. The FN8120GH is the FN8120G in the new Waldorf Continuum range. It keeps the 20 litre pan and twin 45MJ/hr infra-red burners, comes with a high back as standard (the H in the model number) and is now 818mm deep and 1130mm high.
What is the infra-red burner system?
Instead of a direct flame under the pan, the infra-red burners radiate heat into the pan. That transfers more of the gas energy into the oil and less into the surrounds, so it heats faster, recovers quicker between baskets and uses less gas for the same output.
What is a cold zone?
The FN8120GH puts its heat into the pan partway up, not through the bottom. The oil heats from the burners up, and the oil below them stays cool. That cool layer at the bottom is the cold zone.
How does the cold zone save oil?
Crumbs and stray bits of product sink into the cold zone and stop cooking. They don't burn and break down the oil, so it lasts longer.
Do I need flat filter trays in the FN8120GH?
No, and they can shorten your oil life. The fryer is built around its cold zone, which does the job of catching crumbs without a tray.
What's the problem with flat filter trays?
A tray holds crumbs up in the hot cooking zone, where they keep burning and wearing out your oil until the tray is pulled out. The bigger problem is the tray and the mess on it block the convection currents. Hot oil is thick and needs to move freely to cook evenly and recover fast.
How much oil does the FN8120GH hold?
20 litres.
What temperature should I run the FN8120GH at?
180°C or under. Going hotter doesn't cook any better, it just burns your oil.
Should I turn the FN8120GH up to full if I'm slammed?
No. It's a common mistake. Turning it up doesn't give you more power and won't get the oil back to 180°C any faster. All it does is burn your oil.
Do I need a gas regulator fitted to the gas supply?
No. The FN8120GH has a regulator built into the gas control valve. Fitting an external one can take control away from the built in regulator, and sitting under the fryer it gets hit with caustic cleaning chemicals, which causes problems down the track.
Does the FN8120GH come with a gas conversion kit?
Yes. The FN8120GH is supplied set to the gas type you order and includes the conversion kit for the other gas type, so if you order natural gas the LPG kit comes with it.
Does the FN8120GH cook differently on natural gas or LPG?
No, it cooks exactly the same. Natural gas is delivered at about 1kPa, so the fryer needs larger jets to get its full 90MJ/hr. LPG is delivered at about 2.5kPa and carries more energy, so the jets are smaller to cut back the gas flow. The end result is the same power either way.
Does the FN8120GH need power?
No. The dial control model runs on gas only with piezo ignition, so no power point is needed.
Where should the FN8120GH be positioned?
Under an exhaust hood, with no shelves above it, and at least 500mm away from equipment like combi ovens. Fryers put vaporised oil into the air, and if that gets into a combi it can damage the electronics.
Can the FN8120GH go next to other equipment?
Yes, fryers can go beside most things. You'll usually want an infill bench next to it to hold the product you're about to fry. If you're worried about water or food falling into the oil from the next appliance, side shields are available.
How do I clean the FN8120GH?
Drain the oil, flush the pan out with water, then clean it with plain soap and water. Food often jams in the drain, so be careful clearing it. People push a metal rod in to clear it and then close the drain valve on the rod, which damages the seals in the ball valve and makes it leak.
What causes breakdowns on gas fryers like the FN8120GH?
Too much hosing. Water gets into the pilot, valves and jets. The jets are aluminium, and floor cleaner and oven and grill cleaner react with it.
Why should I use the lid on the FN8120GH?
Put the lid on every night so nothing falls into the oil. It's also your best friend in a fire, because it smothers it fast.
Can I fit an oil filter under the FN8120GH?
Yes. The Waldorf Filtamax FF8130E 20 litre filter fits under it.
Is a Filtamax oil filter worth it on the FN8120GH?
Often not anymore. When oil prices were crazy they paid for themselves. Now a drum of oil is around $50, and oil companies supply in bulk with a pump out tank, so for most kitchens the saving isn't worth the cost and the time spent filtering.
What is the difference between the FN8120GH and the FN8120GEH?
Same fryer, same 20 litre pan and twin 45MJ/hr infra-red burners. The FN8120GH has a dial control. The FN8120GEH has a digital display electronic control and needs a 10A power point.
What is the difference between the FN8120GH and the FN8226GH?
The FN8226GH is the twin pan version in the same 450mm width, with two 13 litre pans. You can run two oils, or just one side in quiet times.
What is the difference between the FN8120GH and the FN8118GH?
The FN8118GH is the smaller 400mm fryer with an 18 litre pan. The FN8120GH is 50mm wider and holds 20 litres.
What is the difference between Cue and Bold?
Cue puts a coloured vitreous enamel finish on the control panel, and the rest of the fryer stays stainless steel. Bold puts the colour on the control panel and the front panels, so the whole front is coloured. Both come in black (C0 or B0), chilli red (C2 or B2) or burgundy (C3 or B3).
Does the colour change how the fryer works?
No. Cue and Bold are the same fryer with an enamel finish. Performance, oil capacity and warranty are the same as the stainless model.

What does tailgate delivery mean?
Standard freight delivers to your kerbside, and strictly speaking getting the fryer off the truck is up to you. A tailgate truck has a lift on the back to lower it to the ground. Most drivers will give you a hand anyway, but a tailgate is the only way it's guaranteed.
