Each 13 litre pan has its own 45MJ/hr infra-red burner and its own control, so you can fry two products at different temperatures at once, keep flavours apart, or turn one side off in quiet times to save gas. Together the two pans fry up to 31kg an hour, and a large cold zone below the burners lets crumbs settle away from the heat, keeping the oil cleaner and lasting longer.
The infra-red burners transfer heat from the burner to the pan more efficiently than a direct flame, which loses energy to the surrounds, so the FN8226GEH heats faster and uses less gas for the same output. The stainless steel pans carry a 10 year limited warranty.
Each pan has its own digital control, a display thermostat in place of a dial for tighter temperature accuracy, showing the actual oil temperature. Each pan also has three programmable product timers with a countdown display and alarm, so every timer can be set to a different product and cook time. The controls run off a standard 240V 10A power point, and the plug cordset is supplied.
Waldorf Continuum is made by Moffat. The FN8226GEH runs on natural gas or LPG, so a licensed gas fitter makes the connection. Like all Moffat gas fryers, it has a gas regulator built in, so a separate regulator is not required and should not be fitted. The FN8226GEH is supplied set to the gas type you order and includes a conversion kit, so if you order natural gas the LPG conversion kit comes with it for later use if you ever need to switch.
Best for: busy kitchens that want twin pan flexibility with digital control and timers on each pan, especially with changing staff.

Frequently asked questions
Who makes the Waldorf FN8226GEH?
Moffat makes Waldorf in New Zealand. Moffat also distributes and services it across Australia.
Has the FN8226GEH replaced the FN8226GE?
Yes. The FN8226GEH is the FN8226GE in the new Waldorf Continuum range. It keeps the two 13 litre pans, the digital controls with three timers per pan and the twin 45MJ/hr infra-red burners, comes with a high back as standard (the H in the model number) and is now 818mm deep and 1130mm high.
What's the advantage of a twin pan fryer?
You can run two oils and keep flavours apart, like seafood away from chips, run each pan at a different temperature, or turn one side off in quiet times to save gas. If space is tight, twin pan is the way to go.
Can I run just one pan on the FN8226GEH?
Yes. Each pan has its own burner and its own control, so you can turn one side off in quiet times and only heat the oil you need.
Is the FN8226GEH better than two single pan fryers?
If you have the room, two single pan fryers are better. You get more capacity, and if one goes down you're still frying. If space is tight, the twin pan gives you two pans in one 450mm unit.
What is the difference between the FN8226GEH and the FN8120GEH?
Same 450mm width and the same 90MJ of infra-red burners. The FN8120GEH has one 20 litre pan. The FN8226GEH splits that into two 13 litre pans, each with its own burner and control.
What is the difference between the FN8226GEH and the FN8226GH?
Same fryer, same two 13 litre pans and twin 45MJ/hr infra-red burners. The FN8226GH has dial controls and runs on gas only. The FN8226GEH has a digital control and three programmable timers on each pan, and needs a 10A power point.
Is the digital control on the FN8226GEH worth the extra?
If you have a lot of staff turnover, yes. You program the time and temperature for each product, so staff just pick the product, drop the basket, and an alarm tells them when to pull it out. It takes the guesswork out.
How do the timers on the FN8226GEH work?
Each pan has three programmable product timers, each with its own countdown display and alarm. That's six timers across the fryer, so chips, fish and chicken can each run off their own setting.
Does the FN8226GEH need a power point?
Yes. The digital controls need a standard 240V 10A power point. The plug cordset is supplied.
What is the infra-red burner system?
Instead of a direct flame under the pan, the infra-red burners radiate heat into the pan. That transfers more of the gas energy into the oil and less into the surrounds, so it heats faster, recovers quicker between baskets and uses less gas for the same output.
What is a cold zone?
The FN8226GEH heats the oil from partway up each pan, not from the bottom. The burners sit higher up, so the oil heats from there up and the oil below stays cool. Crumbs and stray bits of product sink into that cold zone and stop cooking, so they don't burn and break down your oil.
Should I put a crumb tray in the FN8226GEH?
No, and they can shorten your oil life. They hold crumbs up in the hot cooking zone where they keep burning, and the tray and the mess on it block the convection currents. Hot oil is thick and needs to move freely to cook evenly and recover fast. The cold zone already does the job.
How much oil does the FN8226GEH hold?
13 litres in each pan, 26 litres in total.
What temperature should I run the FN8226GEH at?
180°C or under. Going hotter doesn't cook any better, it just burns your oil.
Will a higher setting help the FN8226GEH recover faster?
No. It's a common mistake. Turning it up doesn't give you more power and won't get the oil back to 180°C any faster. All it does is burn your oil.
Do I need a gas regulator fitted to the gas supply?
No. The FN8226GEH has a regulator built into the gas control valve. Fitting an external one can take control away from the built in regulator, and sitting under the fryer it gets hit with caustic cleaning chemicals, which causes problems down the track.
Can the FN8226GEH run on LPG or natural gas?
Yes. The FN8226GEH is supplied set to the gas type you order and includes the conversion kit for the other gas type, so if you order natural gas the LPG kit comes with it.
Does the FN8226GEH cook differently on natural gas or LPG?
No, it cooks exactly the same. Natural gas is delivered at about 1kPa, so the fryer needs larger jets to get its full 90MJ/hr. LPG is delivered at about 2.5kPa and carries more energy, so the jets are smaller to cut back the gas flow. The end result is the same power either way.
Can I put a shelf above the FN8226GEH?
Under an exhaust hood, with no shelves above it, and at least 500mm away from equipment like combi ovens. Fryers put vaporised oil into the air, and if that gets into a combi it can damage the electronics.
Can the FN8226GEH go next to other equipment?
Yes, fryers can go beside most things. You'll usually want an infill bench next to it to hold the product you're about to fry. If you're worried about water or food falling into the oil from the next appliance, side shields are available.
What should I use to clean the FN8226GEH?
Drain the oil, flush each pan out with water, then clean it with plain soap and water. Food often jams in the drain, so be careful clearing it. People push a metal rod in to clear it and then close the drain valve on the rod, which damages the seals in the ball valve and makes it leak.
What causes breakdowns on gas fryers like the FN8226GEH?
Too much hosing. Water gets into the pilot, valves and jets. The jets are aluminium, and floor cleaner and oven and grill cleaner react with it. With digital controls, keep water away from the control panel too.
Does the FN8226GEH come with a lid, and why use it?
Put the lid on every night so nothing falls into the oil. It's also your best friend in a fire, because it smothers it fast.
Can I fit an oil filter under the FN8226GEH?
Yes. The Waldorf Filtamax FF8130E 20 litre filter fits under it.
Is a Filtamax oil filter worth it?
Often not anymore. When oil prices were crazy they paid for themselves. Now a drum of oil is around $50, and oil companies supply in bulk with a pump out tank, so for most kitchens the saving isn't worth the cost and the time spent filtering.
What colour options does the FN8226GEH come in?
Stainless as standard, or Cue or Bold. Cue puts a coloured vitreous enamel finish on the control panel, and the rest of the fryer stays stainless steel. Bold puts the colour on the control panel and the front panels, so the whole front is coloured. Both come in black (C0 or B0), chilli red (C2 or B2) or burgundy (C3 or B3).
Does the colour change how the fryer works?
No. Cue and Bold are the same fryer with an enamel finish. Performance, oil capacity and warranty are the same as the stainless model.
What comes with the FN8226GEH?
Two standard fryer baskets, a stainless steel lid, a plug cordset and a gas conversion kit.
What does it cost to deliver the FN8226GEH?
Delivery is typically $120 plus GST. Use the Freight Cost Guide button on this page for the exact price to your postcode, including whether a tailgate is needed.
What does tailgate delivery mean?
Standard freight delivers to your kerbside, and strictly speaking getting the fryer off the truck is up to you. A tailgate truck has a lift on the back to lower it to the ground. Most drivers will give you a hand anyway, but a tailgate is the only way it's guaranteed.
Can I get a cheaper ex-display or scratch and dent fryer?
Sometimes. These are Moffat units with freight damage or ex-display, subject to availability.
