A fan blows extra air across the two infra-red burners, so they can take in more gas and burn hotter. That lifts the input to 140MJ, against 90MJ on the standard FN8130GH, and the 31 litre pan fries up to 50kg an hour for heavy, back to back frying. A large cold zone below the burners lets crumbs settle away from the heat, keeping the oil cleaner and lasting longer.
It comes with three standard baskets, or you can swap them for two large baskets at no cost. Just let us know which when you order. The stainless steel pan carries a 10 year limited warranty.
Ignition is electronic, with a separate circuit for each burner. Two red lamps on the front show if a burner has failed to light, and a reset switch for each burner sits inside the door to clear a lockout. The fan and ignition run off a standard 240V 10A power point, and the lead is supplied.
Waldorf Continuum is made by Moffat. The FN8130GHPOH runs on natural gas or LPG, so a licensed gas fitter makes the connection. Like all Moffat gas fryers, it has a gas regulator built in, so a separate regulator is not required and should not be fitted. The FN8130GHPOH is supplied set to the gas type you order and includes a conversion kit, so if you order natural gas the LPG conversion kit comes with it for later use if you ever need to switch.
Best for: fast food and high volume kitchens doing heavy, back to back frying that need the most output from a single 600mm pan.

Frequently asked questions
Who makes the Waldorf FN8130GHPOH?
Moffat makes Waldorf in New Zealand. Moffat also distributes and services it across Australia.
Has the FN8130GHPOH replaced the FN8130G-HPO?
Yes. The FN8130GHPOH is the FN8130G-HPO in the new Waldorf Continuum range. It keeps the 31 litre pan and the 140MJ fan assisted infra-red burners, comes with a high back as standard (the H on the end of the model number) and is now 818mm deep and 1130mm high.
What does HPO mean on the FN8130GHPOH?
High power output. A fan blows extra air across the burners so they can take in more gas and burn hotter, lifting the input to 140MJ and the output to 50kg an hour.
What is the difference between the FN8130GHPOH and the FN8130GH?
Same 600mm width and 31 litre pan. The FN8130GH runs 90MJ and fries up to 31kg an hour, on gas only with piezo ignition. The FN8130GHPOH adds a fan to push the burners to 140MJ and 50kg an hour, with electronic ignition, so it needs a 10A power point.
Does the FN8130GHPOH need a power point?
Yes. The fan and the electronic ignition need a standard 240V 10A power point. The lead is supplied.
What happens if a burner on the FN8130GHPOH doesn't light?
Each burner has its own ignition circuit. A red lamp on the front shows which burner has failed, and a reset switch for each burner inside the door clears the lockout so you can try again.
Can I choose the baskets on the FN8130GHPOH?
Yes. It comes with three standard baskets, or you can swap them for two large baskets at no cost. Three standard baskets suit several products at once. Two large baskets suit bigger batches of one product. Just let us know which when you order.
How much oil does the FN8130GHPOH hold?
31 litres.
How does the infra-red burner system work?
Instead of a direct flame under the pan, the infra-red burners radiate heat into the pan. That transfers more of the gas energy into the oil and less into the surrounds, so it heats faster, recovers quicker between baskets and uses less gas for the same output.
How does the FN8130GHPOH keep crumbs from burning?
The FN8130GHPOH heats the oil from partway up the pan, not from the bottom. The burners sit higher up, so the oil heats from there up and the oil below stays cool. Crumbs and stray bits of product sink into that cold zone and stop cooking, so they don't burn and break down your oil.
Should I use flat filter trays in the FN8130GHPOH?
No, they can shorten your oil life. They hold crumbs up in the hot cooking zone where they keep burning, and the tray and the mess on it block the convection currents. Hot oil is thick and needs to move freely to cook evenly and recover fast. The cold zone already does the job.
What temperature should I run the FN8130GHPOH at?
180°C or under. Going hotter doesn't cook any better, it just burns your oil. The extra power on the HPO is for recovery between loads, not for running hotter.
Will turning the FN8130GHPOH up to full help if I'm slammed?
No. It's a common mistake. Turning it up doesn't give you more power and won't get the oil back to 180°C any faster. All it does is burn your oil.
Should my gas fitter add a regulator to the FN8130GHPOH?
No. The FN8130GHPOH has a regulator built into the gas control valve. Fitting an external one can take control away from the built in regulator, and sitting under the fryer it gets hit with caustic cleaning chemicals, which causes problems down the track.
Does the FN8130GHPOH come with a gas conversion kit?
Yes. It is supplied set to the gas type you order and includes the conversion kit for the other gas type, so if you order natural gas the LPG kit comes with it.
Does the FN8130GHPOH cook differently on natural gas or LPG?
No, it cooks exactly the same. Natural gas is delivered at about 1kPa, so the fryer needs larger jets to get its full 140MJ. LPG is delivered at about 2.5kPa and carries more energy, so the jets are smaller to cut back the gas flow. The end result is the same power either way.
Where should the FN8130GHPOH go in my kitchen?
Under an exhaust hood, with no shelves above it, and at least 500mm away from equipment like combi ovens. Fryers put vaporised oil into the air, and if that gets into a combi it can damage the electronics.
What can go beside the FN8130GHPOH?
Fryers can go beside most things. You'll usually want an infill bench next to it to hold the product you're about to fry. If you're worried about water or food falling into the oil from the next appliance, side shields are available.
How should I clean the FN8130GHPOH?
Drain the oil, flush the pan out with water, then clean it with plain soap and water. Food often jams in the drain, so be careful clearing it. People push a metal rod in to clear it and then close the drain valve on the rod, which damages the seals in the ball valve and makes it leak.
What causes breakdowns on the FN8130GHPOH?
Too much hosing. Water gets into the ignition, valves and jets, and on the HPO the fan and electronics too. The jets are aluminium, and floor cleaner and oven and grill cleaner react with it.
Why use the lid on the FN8130GHPOH?
Put the lid on every night so nothing falls into the oil. It's also your best friend in a fire, because it smothers it fast.
Can I fit an oil filter under the FN8130GHPOH?
Yes. The Waldorf Filtamax FF8140E 32 litre filter fits under it.
Is a Filtamax oil filter worth it?
Often not anymore. When oil prices were crazy they paid for themselves. Now a drum of oil is around $50, and oil companies supply in bulk with a pump out tank, so for most kitchens the saving isn't worth the cost and the time spent filtering.
What colour options does the FN8130GHPOH come in?
Stainless as standard, or Cue or Bold. Cue puts a coloured vitreous enamel finish on the control panel, and the rest of the fryer stays stainless steel. Bold puts the colour on the control panel and the front panels, so the whole front is coloured. Both come in black (C0 or B0), chilli red (C2 or B2) or burgundy (C3 or B3).
Is a Cue or Bold FN8130GHPOH any different inside?
No. Cue and Bold are the same fryer with an enamel finish. Performance, oil capacity and warranty are the same as the stainless model.
What comes with the FN8130GHPOH?
Three standard fryer baskets (or two large on request), a stainless steel lid, a power lead and a gas conversion kit.
How much is delivery on the FN8130GHPOH?
Delivery is typically $120 plus GST. Use the Freight Cost Guide button on this page for the exact price to your postcode, including whether a tailgate is needed.
What does tailgate delivery mean?
Standard freight delivers to your kerbside, and strictly speaking getting the fryer off the truck is up to you. A tailgate truck has a lift on the back to lower it to the ground. Most drivers will give you a hand anyway, but a tailgate is the only way it's guaranteed.
Do you have scratch and dent units?
Sometimes. These are Moffat units with freight damage or ex-display, subject to availability.
