Product Overview

The Waldorf FN8120GEH is the digital control version of the FN8120GH, a 450mm single pan gas fryer from the new Waldorf Continuum range. It replaces the FN8120GE, with the same patented infra-red burner system, three programmable timers and now a high back as standard.

Two 45MJ/hr infra-red burners heat a 20 litre open pan to fry up to 31kg an hour, and a large cold zone lets crumbs settle below the burners to keep the oil clean and lasting longer.

The infra-red burners transfer heat from the burner to the pan more efficiently than a direct flame, which loses energy to the surrounds, so the FN8120GEH heats faster and uses less gas for the same output. The stainless steel pan carries a 10 year limited warranty.

The digital control uses a display thermostat in place of a dial, for tighter temperature accuracy, and shows the actual oil temperature. Three programmable product timers each have a countdown display and alarm, so each one can be set to a different product and cook time. The control runs off a standard 240V 10A power point, and the plug cordset is supplied.

Waldorf Continuum is made by Moffat. The FN8120GEH runs on natural gas or LPG, so a licensed gas fitter makes the connection. Like all Moffat gas fryers, it has a gas regulator built in, so a separate regulator is not required and should not be fitted, since an extra regulator becomes a point of failure. The FN8120GEH is supplied set to the gas type you order and includes a conversion kit, so if you order natural gas the LPG conversion kit comes with it for later use if you ever need to switch.

Best for: busy kitchens that want infra-red efficiency plus digital control and product timers, especially with changing staff.

Frequently asked questions

Who makes the Waldorf FN8120GEH?
Moffat makes Waldorf in New Zealand. Moffat also distributes and services it across Australia.

Has the FN8120GEH replaced the FN8120GE?
Yes. The FN8120GEH is the FN8120GE in the new Waldorf Continuum range. It keeps the digital control with three programmable timers, the 20 litre pan and twin 45MJ/hr infra-red burners, comes with a high back as standard (the H in the model number) and is now 818mm deep and 1130mm high.

What is the difference between the FN8120GEH and the FN8120GH?
Same fryer, same 20 litre pan and twin 45MJ/hr infra-red burners. The FN8120GH has a dial control and runs on gas only. The FN8120GEH has a digital control with three programmable timers and needs a 10A power point.

Is the digital control on the FN8120GEH worth the extra?
If you have a lot of staff turnover, yes. You program the time and temperature for each product, so staff just pick the product, drop the basket, and an alarm tells them when to pull it out. It takes the guesswork out.

How do the timers on the FN8120GEH work?
There are three programmable product timers, each with its own countdown display and alarm. Set each one to a different product and cook time, so chips, fish and chicken can all run off their own timer.

Does the FN8120GEH need a power point?
Yes. The digital control needs a standard 240V 10A power point. The plug cordset is supplied.

What is the difference between the FN8120GEH and the FN8226GEH?
The FN8226GEH is the twin pan digital version in the same 450mm width, with two 13 litre pans. You can run two oils, or just one side in quiet times.

How does the FN8120GEH heat the oil?
With infra-red burners. Instead of a direct flame under the pan, they radiate heat into the pan. That puts more of the gas energy into the oil and less into the surrounds, so it heats faster, recovers quicker between baskets and uses less gas for the same output.

How does the FN8120GEH keep crumbs from burning?
It heats the oil from partway up the pan, not from the bottom. The burners sit higher up, so the oil heats from there up and the oil below stays cool. Crumbs and stray bits of product sink into that cold zone and stop cooking, so they don't burn and break down your oil.

Should I put a crumb tray in the FN8120GEH?
No, and it can shorten your oil life. Flat filter trays look like a good idea, but they hold crumbs up in the hot cooking zone where they keep burning, and the mess blocks the convection currents the oil needs to cook evenly and recover fast. The cold zone already does the job.

How much oil does the FN8120GEH hold?
20 litres.

What temperature should I set the FN8120GEH to?
180°C or under. Going hotter doesn't cook any better, it just burns your oil.

Will a higher setting help the FN8120GEH recover faster?
No. It's a common mistake. Turning it up doesn't give you more power and won't get the oil back to 180°C any faster. All it does is burn your oil.

Should my gas fitter add a regulator to the FN8120GEH?
No. The FN8120GEH has a regulator built into the gas control valve. Fitting an external one can take control away from the built in regulator, and sitting under the fryer it gets hit with caustic cleaning chemicals, which causes problems down the track.

Can the FN8120GEH run on LPG or natural gas?
Yes, either. It's supplied set to the gas type you order and includes the conversion kit for the other gas type, so if you order natural gas the LPG kit comes with it.

Is LPG weaker than natural gas on the FN8120GEH?
No, it cooks exactly the same. Natural gas is delivered at about 1kPa, so the fryer needs larger jets to get its full 90MJ/hr. LPG is delivered at about 2.5kPa and carries more energy, so the jets are smaller to cut back the gas flow. The end result is the same power either way.

Can I put a shelf above the FN8120GEH?
No. It should go under an exhaust hood, with no shelves above it, and at least 500mm away from equipment like combi ovens. Fryers put vaporised oil into the air, and if that gets into a combi it can damage the electronics.

What can I put beside the FN8120GEH?
Fryers can go beside most things. You'll usually want an infill bench next to it to hold the product you're about to fry. If you're worried about water or food falling into the oil from the next appliance, side shields are available.

What should I use to clean the FN8120GEH?
Drain the oil, flush the pan out with water, then clean it with plain soap and water. Food often jams in the drain, so be careful clearing it. People push a metal rod in to clear it and then close the drain valve on the rod, which damages the seals in the ball valve and makes it leak.

How do I avoid service calls on the FN8120GEH?
Go easy with the hose. Water gets into the pilot, valves and jets. The jets are aluminium, and floor cleaner and oven and grill cleaner react with it. With a digital control, keep water away from the control panel too.

Does the FN8120GEH come with a lid, and why use it?
Yes, a stainless steel lid comes with it. Put it on every night so nothing falls into the oil. It's also your best friend in a fire, because it smothers it fast.

Can I fit an oil filter under the FN8120GEH?
Yes. The Waldorf Filtamax FF8130E 20 litre filter fits under it.

Do I need an oil filter machine for the FN8120GEH?
Often not anymore. When oil prices were crazy they paid for themselves. Now a drum of oil is around $50, and oil companies supply in bulk with a pump out tank, so for most kitchens the saving isn't worth the cost and the time spent filtering.

What colour options does the FN8120GEH come in?
Stainless as standard, or Cue or Bold. Cue puts a coloured vitreous enamel finish on the control panel, and the rest of the fryer stays stainless steel. Bold puts the colour on the control panel and the front panels, so the whole front is coloured. Both come in black (C0 or B0), chilli red (C2 or B2) or burgundy (C3 or B3).

Is a Cue or Bold FN8120GEH any different inside?
No. Cue and Bold are the same fryer with an enamel finish. Performance, oil capacity and warranty are the same as the stainless model.

What comes with the FN8120GEH?
Two standard fryer baskets, a stainless steel lid, a plug cordset and a gas conversion kit.

What does it cost to deliver the FN8120GEH?
Delivery is typically $120 plus GST. Use the Freight Cost Guide button on this page for the exact price to your postcode, including whether a tailgate is needed.

Will the driver unload the FN8120GEH off the truck?
Standard freight delivers to your kerbside, and strictly speaking getting the fryer off the truck is up to you. A tailgate truck has a lift on the back to lower it to the ground. Most drivers will give you a hand anyway, but a tailgate is the only way it's guaranteed.

Can I get a cheaper ex-display or scratch and dent fryer?
Sometimes. These are Moffat units with freight damage or ex-display, subject to availability.
