The Convotherm CXGBT6.20D is a gas fired maxx pro combi oven with 6 tray runners in the wider 20 cabinet, taking 14 trays at GN 1/1 or 7 trays at GN 2/1, since two GN 1/1 pans fit side by side on each rack. Made in Germany with steam from a high-performance boiler outside the cooking chamber, every setting runs to 5 levels for finer control over moisture, baking and fan speed. The D in the model name means it has a disappearing door, which fully opens and slides down the right hand side of the oven, clearing the doorway completely for loading in tight kitchens.
Convotherm ovens are backed by Moffat's Australia wide service and spare parts network. The gas boiler runs on natural gas or LPG, with the control electronics plugging into a standard 10A outlet rather than needing a three phase electrical connection. The 6.20D suits kitchens with an existing gas line that want more capacity per rack without stepping up to a taller cabinet, plus TrayView, Regenerate+ and the disappearing door where floor space is tight.
Best for: kitchens with an existing gas supply that need higher tray capacity from a wider cabinet, with maxx pro's finer 5-level control and lower running costs than the electric equivalent.

What does CXGBT6.20D mean?
CX is the maxx pro range. G is gas (E is electric). BT is the easyTouch interface (BD is easyDial). 6 is the number of tray runners, 20 means the wider cabinet that takes two GN 1/1 trays per rack, or one GN 2/1. D means disappearing door.
What's the difference between the .10 and .20 width?
Tray width. The .10 cabinet takes one GN 1/1 tray per runner, feeding front to back. The .20 cabinet is wider and takes two GN 1/1 trays side by side per runner, or a single GN 2/1 tray, roughly doubling capacity for the same number of runners. If you're regularly loading GN 2/1 pans or need higher throughput per rack, the .20 is the better fit.
What is a disappearing door?
The door fully opens and slides down the right hand side of the oven cabinet, clearing the doorway completely rather than swinging open in front of the unit. It's a genuine help in tight kitchens where a standard swing door would get in the way of loading trolleys or standing room.
Does the CXGBT6.20D need a hood?
Yes. Combi ovens release steam when the door opens, so an extraction hood is required regardless of the output rating. Ventilation requirements can vary by council, so check your local regulations if unsure.
Is it plug-in or hardwired?
The control electronics plug into a standard 10A outlet with the cordset fitted, no electrician needed for the power side. The gas connection itself does need a licensed gas fitter, and at 74MJ/hr it's a bigger connection than the .10 width model.
What's the difference between the gas and electric versions?
Same tray capacity, same 5-level control and disappearing door. The gas model needs a natural gas or LPG line rated at 74MJ/hr instead of a three phase electrical supply, and plugs into a standard 10A outlet for its control electronics rather than being hardwired. Gas typically works out cheaper to run if you've already got the supply in, electric is simpler to install if you don't.
