The Convotherm CXGBT20.20D is a 40 tray gas boiler combi oven built as a full height roll-in cabinet for the highest volume kitchens that want to run on gas rather than a hardwired electrical connection. It loads via wheel-in rails, taking 40 x GN 1/1 trays or 20 x GN 2/1 trays on a standard loading trolley, and runs on a high performance boiler generating steam outside the cooking chamber for consistent saturation. A disappearing door slides fully down the right hand side of the cabinet, keeping the doorway clear while a full trolley is wheeled in or out.
Convotherm combi ovens are manufactured in Germany and distributed in Australia by Moffat, backed by Moffat's Australia wide service and spare parts network. The CXGBT20.20D suits large hospital and aged care catering, central production kitchens, and function caterers batch cooking at scale with gas already on site, where trolleys of product need to move in and out fast. The easyTouch 10 inch capacitive touch display runs Press&Go automatic cooking with up to 399 stored profiles, and the ConvoClean+ system handles cleaning without staff standing over the oven. A ground level status LED shows cooking, preheat and error states at a glance from across the kitchen.
Best for: high volume institutional and central production kitchens with gas already on site, running trolley-based batch cooking with the option to run GN 2/1 trays.

Does the CXGBT20.20D need an electrician to install?
No. The CXGBT20.20D runs on a 10A cordset that plugs straight into a standard 10A outlet for the control electronics, no electrician needed for the electrical side. It does need a gas fitter to connect the R3/4 gas supply, on natural gas or LPG.
How does the steam generation work?
Steam is generated by a high performance boiler outside the cooking chamber, giving guaranteed saturation for steam mode and automatic moisture control in combi-steam mode. Natural Smart Climate (ACS+) manages humidity and airflow through the cook automatically, with Crisp&Tasty, BakePro and HumidityPro extra functions if finer control is needed.
How does loading work on a roll-in model?
Trays sit on a mobile loading trolley that wheels directly into the cabinet along built in rails, rather than sliding onto fixed racks inside the oven. This lets kitchens load a full trolley of 40 x GN 1/1 trays, or 20 x GN 2/1 trays, at a prep bench, then wheel the whole load into the oven in one go, and wheel it straight back out to a holding area once cooked.
CXGBT20.20D or CXGBT20.10D, which one do I need?
Both are full height roll-in cabinets with the same gas connection, boiler and easyTouch controls. The CXGBT20.10D takes GN 1/1 trays only, 20 at a time. The CXGBT20.20D is the wider cabinet, taking 40 x GN 1/1 trays or 20 x GN 2/1 trays, so it suits the largest kitchens or sites running large format trays. If your volume doesn't need GN 2/1 capacity or 40 tray throughput, the narrower CXGBT20.10D saves on footprint and cost.
CXGBT20.20D or CXEBT20.20D, which one do I need?
Both share the same 40 tray or 20 x GN 2/1 capacity, boiler and easyTouch controls. The CXGBT20.20D runs on gas with a simple 10A plug-in for the control electronics, so if gas is already run to your kitchen it is often the cheaper appliance to install and run. The CXEBT20.20D is hardwired on a three phase electrical connection, a better fit if you don't have gas on site. The gas model also needs more ventilation clearance above the unit, so check your hood layout before deciding.
Do I need an exhaust hood?
Yes. Combi ovens release steam every time the door opens, so extraction is required regardless of the model. The CXGBT20.20D needs 1000mm clearance above the unit for ventilation, double the clearance of the electric model, so check this against your existing hood layout. Ventilation requirements can vary by council, so check your local regulations if unsure.
What does the disappearing door do?
Instead of swinging open, the door slides fully down the right hand side of the cabinet and out of the way completely. This keeps the doorway clear while a loaded trolley is being wheeled in or out.
