Convotherm CXEBD10.20 Electric Combi Oven

The Convotherm CXEBD10.20 is a 22 tray electric boiler combi oven built for kitchens that want serious throughput without a touch screen learning curve. The wider .20 body takes 22 x GN 1/1 trays on 68mm spacing, or 11 x GN 2/1 trays for larger format cooking, and runs on a high performance boiler generating steam outside the cooking chamber for consistent saturation. The easyDial control is a single rotary dial with a digital display and a TriColor status ring, so every function sits on one operating level.

Convotherm combi ovens are manufactured in Germany and distributed in Australia by Moffat, backed by Moffat's Australia wide service and spare parts network. The CXEBD10.20 suits high volume commercial kitchens and function catering that want the largest easyDial capacity, with the option to run GN 2/1 trays for bulk batch cooking. It stores 99 cooking profiles of up to 9 steps each, runs ConvoClean automatic cleaning, and has HACCP data storage built in. Does the CXEBD10.20 need an electrician to install?

Yes. The CXEBD10.20 is hardwired, draws 48.7A on a three phase 400V supply, and needs a licensed electrician for installation. It is not a plug-in appliance.

How does the steam generation work?

Steam is generated by a high performance boiler outside the cooking chamber, giving guaranteed saturation for steam mode and automatic moisture control in combi-steam mode. Natural Smart Climate (ACS+) manages humidity and airflow through the cook automatically, with Crisp&Tasty, BakePro and HumidityPro extra functions if finer control is needed.

What trays does it take?

The CXEBD10.20 takes 22 x GN 1/1 trays or 11 x GN 2/1 trays on 68mm spacing, or up to 16 x 600 x 400mm baking sheets with the appropriate rack fitted.

CXEBD10.20 or CXEBD10.10, which one do I need?

Both hold 11 shelves and run the same easyDial controls, boiler and door style. The CXEBD10.10 takes GN 1/1 trays only, 11 at a time. The CXEBD10.20 is the wider cabinet, taking 22 x GN 1/1 trays or 11 x GN 2/1 trays, so it suits kitchens running large format trays or genuinely high covers. If your service doesn't need GN 2/1 capacity, the narrower CXEBD10.10 saves on footprint and cost.

easyDial or easyTouch, what's the difference?

Both ranges run the same boiler, cooking modes and Natural Smart Climate functions. easyDial uses a single rotary dial and digital display with a TriColor status ring, stores 99 cooking profiles, and has a standard hinged door. easyTouch adds a 10 inch capacitive touch screen, Press&Go automatic cooking with up to 399 profiles, WiFi and Ethernet as standard, and a disappearing door. If your kitchen wants the simplest possible control and a lower price point, easyDial covers the same core cooking performance.

Do I need an exhaust hood?

Yes. Combi ovens release steam every time the door opens, so extraction is required regardless of the kW rating. Ventilation requirements can vary by council, so check your local regulations if unsure.
