The Waldorf RN8104E-RB is an electric solid top on a refrigerated base, giving you two GN 1/1 drawers of cold storage right under the cooking surface. It runs a 10.8kW cast steel hot plate across four independent heating zones. Made in New Zealand by Moffat.
The plate is a one-piece welded 2.0mm stainless steel top over a 16mm thick 16Mo3 chrome moly steel hotplate, with four radiant elements underneath giving four separate heating zones at 2.7kW each. Each zone has its own 6 position control switch with a power indicator light, so you can run different zones at different heats at the same time, handy if you're simmering on one side and holding heat on the other.
The refrigerated base runs a ventilated system, holding -2°C to 8°C in the two GN 1/1 drawers below. Drawer guides are heavy-duty European telescopic runners, with magnetic gaskets you can replace without tools, and defrost water evaporates off automatically, so there's no condensate drain to plumb in. The condensing unit pulls out through the front for servicing. It sits on 63mm stainless steel legs with adjustable feet.
The cooktop runs on 10.8kW three phase power, 400 to 415V, and needs a dedicated three phase circuit run to it before installation. The refrigeration unit is separate, running off its own standard 10 amp plug, 240V, so it just needs a regular power point nearby.
How many heating zones does the RN8104E-RB have?
Four independent zones at 2.7kW each, so you can run different heats across the plate at the same time.
Does this need three phase power?
The cooktop does, 10.8kW at 400 to 415V. The refrigeration unit is separate and just needs a standard 240V power point.
Does the refrigerated base need a drain?
No. Defrost water evaporates automatically, so there's no condensate drain to plumb in.
