Two 3.5kW Incoloy 825 coil elements heat the water directly, controlled by a mechanical thermostat running 30-110°C across three settings: boil, simmer and standby. The elements tilt up for easy cleaning, and an over-temperature cut-out protects them if the pan ever runs dry.
Six stainless steel baskets with moulded handles are included as standard, sitting on a stainless steel wire support grid, with a hinged basket drain stand incorporated. An integrated water faucet fills the pan and doubles as a starch skimming tap, with a drain valve for a full pan change between services.
A noodle conversion kit with 5 baskets is available separately. Waldorf 800 Series is made by Moffat in New Zealand.
