The Convotherm CMAXX10.10 is a combi oven with 11 tray capacity at full 1/1 GN depth, the larger of the two models in Convotherm's maxx range, sitting on a benchtop as standard or floor standing when paired with the CSK100 stand. It's built in Convotherm's China factory to a simpler design than the maxx pro range, with steam generated by injecting water straight into the cooking chamber rather than through a boiler, so there's less to go wrong and less to service.
Convotherm ovens are backed by Moffat's Australia wide service and spare parts network. The 10.10 covers steam, combi-steam and convection cooking with the core features most kitchens actually use day to day, without the extra digital layer of the maxx pro range.
Best for: higher volume kitchens that want a genuine floor standing combi oven with the essentials done well, without paying for maxx pro features they won't use.

Does the CMAXX10.10 need a hood?
Yes. Combi ovens release steam when the door opens, so an extraction hood is required regardless of the kW rating. Ventilation requirements can vary by council, so check your local regulations if unsure.
What are the two water connections for?
One G3/4" connection feeds the steam injection system, the other feeds cleaning and the optional retractable hand shower. Both need a permanent connection or funnel waste trap on the DN50 drain, since this is a fully plumbed appliance.
Is it plug-in or hardwired?
Hardwired. The 10.10 draws up to 28.4A on a 400V three phase supply and needs an electrician to connect it.
What's the difference between the maxx and maxx pro range?
The maxx range covers steam, combi-steam and convection with fixed 3-level settings for moisture and baking, and no boiler, so there's less to service. The maxx pro range adds finer 5-level control, features like TrayView and ConvoSmoke, and a disappearing door on some models, for a higher price. If your kitchen just needs reliable combi cooking without the extra digital layer, the maxx is the more cost effective choice.
What's the difference between the 6.10 and 10.10?
Tray count and height. Both take full size GN 1/1 trays, the 10.10 holds 11 instead of 7 in a taller cabinet, with more power draw to match. Choose based on how much output your service actually needs.
