Two independent pans each run their own digital control and an 11kW flat bar element, for 22kW total and up to 40kg an hour. Each pan holds 17.5 litres, so you can fry two products at two temperatures at once, or run one pan and save oil in quieter periods.
Because it heats the oil directly with immersed flat bar elements, it recovers temperature fast between baskets. The elements hinge out and are counterbalanced for an easy clean, and a tilt switch cuts the power when they are lifted. A fail-safe over-temperature cut-out, safety start switch and power and heating indicator lights are built in.
The E stands for digital control. Instead of a dial, the E66E has a digital display thermostat on each pan that gives tighter temperature accuracy and shows the actual oil temperature. It has 3 programmable product timers per pan with countdown displays and alarms: drop a basket and the timer counts down, then alerts you when it is done, and you can set each timer to a different product on a different cook time.
Blue Seal Evolution Series is made by Moffat. The E66E runs on 415V three phase power, so an electrician makes the final connection. There is no gas, flue or conversion to deal with, which suits sites without a gas supply. The stainless steel pan carries a 10 year limited warranty.
Best for: high volume electric kitchens that need to fry two products at once, or flex between one and two pans through the day.
What is the advantage of a twin pan fryer?
Two separate pans let you fry two different products at two different temperatures at the same time, with no flavour transfer. In quieter periods you can run just one pan to save oil and power, then bring the second online when you get busy.
Is it gas or electric?
Electric. It has immersed flat bar elements and runs on 415V three phase power, so there is no gas connection, flue or gas conversion. An electrician makes the final connection.
How do you clean it?
The heating elements hinge out of the pans and are counterbalanced, so they lift clear for easy cleaning. A tilt switch cuts power to the elements when they are raised, and the pans drain through the drain valves.
