Three 36MJ burners heat a 1192mm x 530mm griddle plate 20mm thick, with separate left, centre and right heat zones each on their own 90-300°C thermostat, so you can run different heats across the width of the plate at once. The plate is top weld sealed with an overlapping finish front and rear, so there's no lip or trap for grease and food debris to catch in during cleaning. Each burner runs on full pilot and flame failure protection with piezo ignition.
Underneath, two GN 2/1 drawers run from negative 2 to positive 8 degrees on a ventilated R134a system, tropical climate rated, with a digital electronic thermostat, automatic defrost and automatic evaporation of the defrost water, so there's no condensate drain to plumb in. The condensing unit slides out through the front of the unit for servicing without needing to move the whole griddle.
The GP8120G-RB plugs into a 240V 10A outlet for the fridge component. Ribbed or mirror chromed plate options and joining caps are available for multi-unit runs. Waldorf 800 Series is made by Moffat in New Zealand, and the griddle comes complete with a gas type conversion kit if you ever need to switch between natural gas and LPG.
Best for: high volume prep lines that want cold ingredient storage within arm's reach of the widest griddle in the range, without a separate underbench fridge taking up extra floor space.
What's the difference between a Grill top and a griddle?
Grill top, or most commonly called a grill plate, is the most common type of flat grill in use. It's the option on our gas stoves and cooktops, with a thinner plate around 12mm, a single burner per 300mm section, and a simple valve instead of a thermostat, so it's either on high or low. The plate's removable for cleaning, which leaves a gap front and back that caustic cleaning fluid can work into over time and corrode. Grease is caught in a shallow tray per 300mm section.
The GP8120G-RB is a griddle, a different piece of equipment entirely. The plate is much thicker at 20mm, thermostatically controlled from 90-300°C rather than just high or low, and welded in as a sealed, non-removable unit with no gap for anything to get into. Grease drains into one deep tray under the whole plate instead of several shallow ones per section.
Does the GP8120G-RB need a drain for the fridge?
No. Defrost water evaporates automatically, so there's no condensate drain to plumb in during installation.
Does the GP8120G range come on other bases besides refrigerated?
Yes. This GP8120G-RB is the refrigerated base version specifically. The GP8120G-B comes on bench legs, the GP8120G-LS comes on an open leg stand, and the GP8120G-CB comes on a fully enclosed cabinet base without refrigeration.
What gas type does the GP8120G-RB run on?
Either natural gas or LPG, just let us know which when you order. Connection is a ¾″ BSP male gas inlet, so a licensed gas fitter makes the connection.
