Turbofan P8M/2 Double Stacked Prover and Holding Cabinet

The Turbofan P8M/2 gives you two full size prover and holding cabinets stacked on one stainless steel frame, doubling your proving and holding capacity without doubling your floor space.

Each cabinet works as either a prover or a holding cabinet, switched with a simple Off, Prove or Hold selector. A mechanical thermostat runs 20 to 85°C, well below oven temperatures, since this is for proving dough and holding cooked food warm, not for baking. Humidity is controlled manually, and the water tank fills itself automatically. A low velocity fan gently circulates air around the cabinet rather than blasting it like a convection oven, and dual halogen lamps let you see inside.

The door is side hinged, set up for left hand opening as standard, though it can be field converted to right hand if that suits your kitchen layout better. Each cabinet also plugs in on its own 10A cordset, so you'll need two power points, not one.

The P8M/2 doesn't arrive already stacked. It ships as two individual P8M prover and holding cabinets plus a stacking kit that goes together on site.

Does the P8M/2 arrive already stacked?

No. It comes as two separate P8M cabinets plus a stacking kit, and goes together on site.

Can I use it as both a prover and a holding cabinet?

Yes. Each cabinet has an Off, Prove and Hold selector, so you can switch between the two functions as you need.

Can the door be changed to open the other way?

Yes. The door ships hinged on the left as standard, but it's field convertible to a right hand hinge if that suits your kitchen better.

Do I need to connect water to use this cabinet?

No. Water fills automatically once connected, but the connection itself is optional, mainly there for the optional water filter kit.
